
I can't help but think of a hot summer night when I see this gorgeous, dimly sexy photo of a Pesto Zucchini Tomato Gratin from vegan and gluten-free food blogger, Gluten-free Goddess. The gratin is made from quintessential summer vegetables, zucchini, tomatoes, and late season artichokes, which are tossed with basil pesto before baking, topped with (gluten-free) breadcrumbs. I would have eaten the vegetables as is, but the Goddess serves it over a bed of pasta.

This truly is a fab recipe - and [as I mentioned on the blog] easily made vegan with the choice of vegan mozzarella.
I'm an ovo-lacto vegetarian myself [with a fondness for vegan foods; hence my inclusion of vegan recipes and substitutions].
