
Given that April is National Grilled Cheese Sandwich Month, I couldn't let the month go by without making, eating, and posting about grilled cheese at least once!
Everyone has their favorite grilled cheese sandwich, whether it's a slice of Kraft American on Wonder White made at home, or some complex combination of fancy cheeses on fancy bread. People also have their favorite "accompaniments." My Ultimate Grilled Cheese is one I make at home: razor thin slices of sourdough bread filled with extra sharp cheddar cheese and thinly sliced tomatoes. I know tomato soup is a popular accessory to grilled cheese sandwiches, but I prefer just throwing fresh ones into the sandwich to make it easier. I have to cut the crusts off and eat them while I'm standing there over the chopping board, then cut the sandwich into long strips. When I eat them, I feel like I'm eating cheese-filled French fries.

Two rye bread on stove top grill piece of provolone each piece,4 slices bacon on one piece then another cheese.2 slices slightly grilled tomato(just to take chill off)on other slice then another cheese.On each pice of bread put sliced banana peppers and more cheese each side.Cook very slowly and cover with any lid or pan that works,(I use my large cast iron skillet)Cook slow till all cheese melted.Put together,get your cream of tomato soup and Heaven is yours.

Bakery fresh white bread, one thin slice of sharp sheddar, one thin slice of swiss and one thin slice of smoked ham. I grill it on an iron skillet with a sauce pan on top to flatten it like a panini and I use low heat so it melts well, but doesn't burn the bread. MMMMM!
My other is more fancy-shmancy...I take thinly sliced olive bread, brush some olie oil o the top and press the iled side on to finely grated fresh parmeggiano reggiano. I do that on both sides and when it's grillled, the bread becomes this crispy, cracker-like cheese crust. But there's more! I use aged gouda in the center and add a thin slice of prosciutto or Italian salami. It really is heaven...the tangy parmeggiano...the sweet and salty olive bread...the sharp and smooth aged gouda ....it's an attack on your tastebuds you'll gladly surrender to!

We take Spatz's Bread (local bakery, white bread real airy, like a sourdough) sliced mozz & jack cheese and put chopped green onions & green peppers between the slices & bake to toast in a hot pizza oven. Very good. Insted of tomato soup, we dip it in cream of broccoli soup.

4-20-2007 @6:22PM Renee said... I also love grilled cheese but when I don't have the time to grill one, I put a couple of slices in the toaster, then when toasted put two slices of cheese and micro wave it for 20 seconds and whalla - a fast great sandwich.

4-20-2007 @6:24PM pooh said... OK I am a small order cook and I have a patron that requests "THE DAVE MAN SPECIAL" two pieces of wonder bread butterd on one side, and place on HOT grill. Mayo on one sde yellow musterd on the other Yellow anerican, bacon,and iceburg lettuce. Press together.....The clients love it and ask ifor it by name.

Toast 2 slices bread, put 1 or 2 slices American cheese btwn slices and microwave about 20 sec. or until cheese melts.

4-20-2007 @9:42PM Valerie said... I start with good quality white or sourdough bread, buttered on both sides. I brown both sides, which is unusual. After browning the first side, I flip the bread and add vintage aged Tillamook white cheddar. After about a minute I put together the two halves and brown the outside. I like to eat it with Trader Joe's cream of tomato (with dill added of course). Talk about heavenly!

4-20-2007 @7:32PM Anjee said... I like a VERY non-traditional grilled cheese because it really isn't cheese. I cut extra firm tofu ultra thin, then layer it on whole wheat bread, coat with nutritional yeast, garlic salt and pepper, then add thin slices of tomato and thick slices of Follow Your Heart vegan cheese. Top the sandwich with another slice of bread, put margarine on the outside of the bread and either put into a panini press or just grill while pressing down on it the whole time. It's great! :)
