
Given that April is National Grilled Cheese Sandwich Month, I couldn't let the month go by without making, eating, and posting about grilled cheese at least once!
Everyone has their favorite grilled cheese sandwich, whether it's a slice of Kraft American on Wonder White made at home, or some complex combination of fancy cheeses on fancy bread. People also have their favorite "accompaniments." My Ultimate Grilled Cheese is one I make at home: razor thin slices of sourdough bread filled with extra sharp cheddar cheese and thinly sliced tomatoes. I know tomato soup is a popular accessory to grilled cheese sandwiches, but I prefer just throwing fresh ones into the sandwich to make it easier. I have to cut the crusts off and eat them while I'm standing there over the chopping board, then cut the sandwich into long strips. When I eat them, I feel like I'm eating cheese-filled French fries.

4-16-2007 @1:14PM Thales said... I take some whole grain bread, toast it half way, then put in some mild cheddar cheese and some very crispy bacon. Then lightly butter the outside of the sandwich and pop it back into the toaster oven for a few moments to melt the cheese and butter.

4-16-2007 @2:27PM Random said... I'm addicted to the croque monsieur. But when I don't have ham or swiss, a good old sandwich composed of cheddar cheese (never ever American) between two slices of buttered wheat. And I constantly press down on the sandwich with a spatula while it's cooking.

Real deli rye with seeds, buttered both sides. Toast both sides on flat top grill. When toasted apply your favorite cheddar, to both sides. Then add sliced brie to one side. Add capicola to the other side. Place sides together, and grill until molten.
Cut and serve.

4-16-2007 @3:14PM Renata said... Feta, crisp bacon and avocado with optional tomato, on Woolworths seed bread (multigrain) in the good old wheat days; now on almond rice bread. Mmmmm, sweet & salty, creamy & crunchy - delicious! (Also great as pizza topping.)
As a backup plan, sharp cheddar and granny smith apple does the trick quite nicely. Add walnuts and dip in honey for fun.

any grilled cheese lovers in So. Cal. should keep an eye out for info on the 2008 Grilled Cheese Invitational, featuring 3 categories of cheese grilling competition (this year's GCI happened in Feb and drew 60 contestants and about 500 grilled cheese fiends).
