
When I separate eggs, I do it manually in a way what most people would say is slightly risky - I crack the egg into two halves over a bowl, and pass the yolk back and forth while letting the whites drip into the bowl. The better way to do it manually, of course, is to sanitize your hands, crack the whole egg into a bowl, and lift the yolk out with your hand. To me, that's a little too messy.
I guess you could use -- uh -- technology, and give this ceramic egg separator a try. You crack the egg into the head, tilt to 45 degrees, and let the whites slip out of his nose. For some reason, if I used this thing, I don't think I'd ever eat an egg white omelet again.

I had my mom order me one of these last week. I have no intention on using it for myself. Instead it's going to be a While Elephant Christmas gift at the in-laws this year. That's one thing I can cross off my list. In April :)

I go for the manual-2-halves method. If you keep a seperate bowl for seperating eggs into, you can make sure you don't ruin your recipe if the yoke breaks. Simply seperate over the bowl, add it to the recipe, then seperate the next one over the bowl.

The manual method with clean hands isn't to fish the yolk out of the bowl, but to crack the egg with one hand into the other hand, then let the white run through your fingers into the bowl, while the yolk rests in your palm. Slimy, but effective.

Another less than messy way to seperate an egg is to use a pasta scoop that has slots or small holes in the bottom. Hold the scoop over a bowl, crack the egg into it, then gently wiggle it to get the white to fall out of the spoon. Could also work with a narrowly slotted spoon, but mine all seem to have too wide of slots.

This is just plain ole nasty..............I use the palm of my hand to seperate my eggs or if your good the egg shell its self. The hands work much better. That what they are there for. Hate gadgets, just more junk!
