DIY Saffron Meringue Chicks for Easter

As we've admitted before, here at Slashfood we are all a little obsessed with Peeps. Love them or hate them, it is hard to escape the little marshmallow treats, especially at Easter time. In the past we've
torched them, used them
in recipes and looked at how to
make your own using a Williams-Sonoma kit.
Now, the
Evil Mad Scientist has sent us this recipe which eliminates the marshmallow altogether but adds a few unexpected twists. Using a meringue base and adding saffron strands for added oomph, I'm fairly certain these "Peeps" will be unlike anything you have ever had before.

LOL Ima the Passover Peeps were hysterical. Dunno about the featured recipe though, seems like a waste of good (and ridiculously expensive) saffron, I'd make it with yellow food colouring.

ok where is all the sugar free PEEPS at... i saw some at my walgreens in my town.. and thay was almost gone.. all the reg sugar ones was still there .. what do that say.. that maybe parents are seeing the lite .. and not waiting there kids to grow up on sugar.. i hope so.. .. .. kids these days dont need all that sugar.. thay have it in there snacks .. candy.. sodas.. cerels.. and alot of other foods.. .. teach them to eat right so thay wont become diabetic.. ......... cali.. in the bay area

SUGAR FREE PEEPS!!!
Here's the recipe for sugar free marshmallows (which, when piped into a baking dish lined with some cornstarch & then left to dry ...become "Peeps")
Add a drop of food coloring to make different collored peeps.

Diet Marshmallow Creme, Marshmallows ...and PEEPS!
Diabetic Sweet Tooth Cookbook by Mary Jane Finsand – copyright 1993.
3 envelopes unflavored gelatin
1/4 c cold water
3/4 c boiling water
3 Tbsp. granulated sugar replacement (like Splenda)
1 tsp. vanilla extract
3 egg whites
Cornstarch (small amount just to dust bottom of the pan)
Line a 13 x 9 inch baking pan with parchment paper. (Let about 1 ½ inches of paper hang over the edge of the pan.) Lightly spray the sides with non-stick cooking spray & sift a light dusting of cornstarch over the bottom of the pan. Set aside.
Sprinkle gelatin over cold water in mixing bowl; set aside 5 minutes to soften.
Add to boiling water in a saucepan; cook and stir until gelatin is dissolved.
Remove from heat.
Cool to consistency of thick syrup.
Add sugar replacement and vanilla, stirring to blend.
Beat egg whites into soft peaks.
Very slowly, trickle a small stream of gelatin mixture into egg whites, beating until all gelatin mixture is blended. Continue beating until light and fluffy. into prepared pan .
Pour marshamllow creme into prepared pan, spreading out evenly.
Refrigerate until set and cut to desired size.
NOTE: For PEEPS: instead of pouring the marshamallow creme into the pan with cornstarch, put warm marshmallow creme into a PIPING BAG & PIPE the peeps onto the cornstarch.
Dip a toothpick into a little brown or black food color & make two dots on the peeps head to give them eyes.
(If you would like a sparkly look. Get "Cake Sparkles" edoble glitter made by Wilton & sold at Michaels. Put it in your blender to make it a fine sparkly dust ...then sprinkle it on the peeps before they dry. (A clean salt shaker works great for this.)
YIELD: 4 cups
SERVING SIZE: 1 cup
EXCHANGE: negligible
CALORIES: 11
CARBOHYDRATES: negligible

Okay, here's the game...
You get two Peeps and put them on a plate with toothpicks stuck through both of them. Then you stick them in the microwave on low. You watch them melt and whichever Peep spears the other first, wins.

I like peeps. My Dad LOVES them. We are mad at the "peep factories" because they got rid of PEEP JELLY BEANS! They are a favorite to alot of people in our town. We LOVE them. Every year we can never find them. We would buy them off a web site if we can. Anyone care to help?
