Oprah's mix-and-match salad chart

Now that spring has officially arrived, just the thought of exotic fruits, vegetables, and crisp, fresh salads is probably enough to get us all running out the door to our local grocery stores or farmers' market.

If you're like me, though, after the initial thrill of spring produce shopping wears off, I tend to fall into the trap of making the same, boring salads night after night. However this chart, which I found on Oprah's site, should come in extremely handy for choosing items that go well with the salad basics that you have on hand, and give you endless ideas for healthy meals.

She has suggestions for which lettuce to choose based on the type of salad you'd like to make, as well as which add-ons would go well, such as beans and legumes, nuts and seeds, cheese and tofu, meats and poultry, and fish and shellfish. By mixing and matching the suggestions, you could probably have a different salad every day between now and September.

For dinner this evening I had bagged italian mixed greens (too lazy to cut my own), with a mix of crumbled ground turkey cooked with a can of italian seasoned tomatoes. Threw on a little garlic powder, a splash of no-fat ranch dressing (yep- ranch always works!), fresh cherry tomatoes, pepper to taste a wa-la! Salad!!! Don't know where it fits on Oprah's chart (if at all), but who cares. It looks good, tastes great- kind of like a hamburgwer with little fat and no bun, I won't be hungrey again in an hour, takes less than 10 minutes to make start to finish and is all in 1 large bowl. I understand some people like a change, but DAG!!! Open your fridge and make a dag-gone salad already!!! If you really want a no work, low fat salad, try a can of Hormel's Turkey Chili on top of bagged greens... Another lazy man's yummy dinner in this lazy girl's cookbook!

If you don't care for the subject or Oprah, move along. Why waste your energy on the negative? Use that energy to give us your best advice on salads, etc.

What thinking person (and there might lie the rub) launches a smear campaign against Oprah because of something like this? If you want to nail her, go after her for allowing Bill O'Reilly to appear on her show about missing and exploited children right after he accused one of the kids who was recently found of "enjoying" his captivity. (At least one group interested in the protection of children canceled that loudmouth moron's appearance; not only did she not cancel, but she refused to say why she let him speak. Needless to say, I'm no longer a fan of this woman.)

Throw brickbats at this woman where brickbats need to be thrown--for reason and not out of your pettiness. Get a grip.

3-30-2007 @3:58PM Jan said... I think Oprah's "toss and turn" chart is fabulous. I'm married 50 years and found some new ideas after all this time. I live in San Francisco where great food is part of the culture and chefs are always coming up with new innovations. This chart will help me get some interesting new meals on the table after my treks to the local Farmer's markets.

Chances are, one of her chef friends wrote it and her name is attached to it because she enjoys it and endorses it. People need to chill out. Although the OP did try to rescind her original comments. So everyone here needs to stop talking about and rather focus on the merits of the chart itself.

Like the chart - after a day at work all I want to do is go home and stare at a wall. Having a shortcut for ideas when I'm completely wiped out at the end of the day - I'm all for it!
