When I was growing up, we begged my Mom to make her "Candy Cake", as she called it. I'm sure it was a trick on her part to get us to eat more oatmeal (something I wouldn't normally touch) but I could have cared less what was in it because it tasted so good. This past weekend we were celebrating my brother's birthday and she made it again in lieu of a regular birthday cake. I had forgotten how much I loved it until I had the first bite. I'm not a huge dessert fan, but I have to admit that I had several pieces. It is super-easy to make, though you may have to adjust the cooking times slightly based on your altitude.
Bring 1 cup of brown sugar and 1/2 cup of butter to a gentle boil. Remove from heat and add 1/2 tsp. baking soda, 1 tsp. vanilla, a dash of salt and 2 cups of oatmeal (oat flakes). Stir until blended and pour into a greased pan. Bake at 350 degrees for about 15 minutes or until golden brown. Cut into squares and let cool.
Sometimes this cake will crumble, but if it does simply sprinkle over the top of ice cream or yogurt, or add some dried fruit/nuts and make some granola.

Funny, I don't like oatmeal cookies very much, I do like cookies with oatmeal *IN* them (like cowboy cookies) -- provided nasty raisins never touch it -- but I'm a fiend for oatmeal cake or other desserts. My fave cake as a kid was an oatmeal cake with a broiled topping similar to that found on German Chocolate Cake. So you know I have to make THIS for sure! WITH the broiled topping!

If you don't like oatmeal, which, i don't, it smells great but tastes kinda bland, try this : make with vanilla soy milk instead of water or regular milk, add 2 tablespoons of Smuckers Blackberry (or strawberry) syrup, and a couple tablespoons of crushed up nuts, dates, and or craisins. honestly, it is so delicious and healthy. I've always wanted to like oatmeal because as a vegetarian i seek protien options, and i finally found a way to make it taste good without sabotaging (totally) the health benefits.

Can you use instant/quick-cooking oats or do you have to use old-fashioned? I want to make this when I get home - sounds SO YUMMY - but I only have instant oats. Might need to stop at the grocery!

Now this is a great one! Hearty,filling and quick! I would add some cocoa to this while boiling and increase the sugar or maybe even peanut butter. I have a similar recipe called school fudge using your ingredients and mine but you dont bake it. Chill in fridge and cut in squares! Will be trying yours this weekend!

I am making this now and cooked it for 15 minutes in oven and its a little shaky. Is is suppose to be firm when its done????? I put it back for another 10 minutes........help!!!!!

I'm going to make another batch on Sunday and will double-check all the ingredients & confirm.
MJ - It is still a bit shaky when I remove it from the oven, and it solidifies as it cools.
