Bob's Peppermint Pie

Peppermint PieNo, I'm not the Bob in the name of this dessert, but I did see Paula Deen make it on the Food Network special All Star Holiday Gifts the other night, and I'm going to make it for Christmas this year. It looked so easy that for a second there I actually thought that she had forgotten a step in the process, but this is Paula Deen we're talking about, so let's get real.

1 envelope plain gelatin
1/4 cup cold water
1/2 cup heavy cream, and another 1 1/2 cups of heavy cream, whipped
8 oz soft peppermint candy
Hard peppermint candy
chocolate cookie pie crust

Soften gelatin in water. In a saucepan, put a half cup of the heavy cream with the candy and heat over low heat til candy melts. Add gelatin and mix well. Let cool and fold in whipped heavy cream. Pour into chocolate pie crust, top with crushed hard candies, and chill.

It might be fun to experiment with different types of peppermint candy to see how it comes out, or use a different pie crust.

12-01-2006 @9:49AM Meg said... Not the taffy stuff no. Soft peppermint is actually a type of hard candy. The most recognizable brand is Bob's Sweet Stripes. Hence the name of the pie. It's usually VERY easy to find around Christmas and such.

12-01-2006 @12:55PM Liz said... I think the soft peppermint has more of the texture of those pastel after dinner mints that are hard but dissolve fast. This as opposed to a hard candy cane that you would suck on. You can buy some on Amazon if your local store doesn't have any.

12-07-2006 @1:55AM Chris Barr said... I finally decided to buy everything and make this, and it was great! But I have a few tips from my experience.

Be sure and crush the hard peppermints very well, I just put them in a ziploc bag and used a hammer, but it still had some large pieces. Next time I make this I'll put them in a blender to get some "peppermint powder" to top it with instead.

I also forgot to whip the second helping of heavy cream! AS soon as I poured it on the creme/melted candy mixture I realized what I had done! I could no longer make this a 2nd layer topping for the pie, I had to combine it all together. So once again I got my trusty blender out and made sure everything was mixed together nicely and poured that new mixture into the pie crust.

I know I didn't do it exactly right, but it still came out great, but next time I'll make it correctly and see if I like it better.

12-28-2006 @3:34PM Laura said... The picture of this pie has two layers, but the recipe does not seem to tell you to divide the whipped cream to make two layers. Do you just put about half of the whipped cream with the cream/candy/gelatin mixture, and the other half as the top layer?
