Just yesterday I bought two big bags of almonds. I also bought cashews and semi-sweet chocolate chips to make a mix, but that's another post. I was thinking of making a dinner using the almonds, and I came across this recipe for Almond Crusted Chicken at the Food Network site. And the fact that it happens to coincide with our Nut Day, well, that's just a bonus.
And, no, I have no idea was Spanish pimenton is, so I'm going to use paprika.
1 cup unblanched almonds
1 1/2 tsps Spanish pimenton or paprika
2 large egg whites
Kosher salt and black pepper
4 boneless/skinless chicken breasts
4 tbs extra virgin olive oil
1 tbs unsalted butter, melted
1 tbs sherry vinegar
5 cups salad greens (optional)
Check out the recipe here. I would think that the salad greens are optional, and as someone says in the comments section at the site, you could serve this over rice or with another side dish. By the way, the pic above is from a similar recipe at MarthaStewart.com.

11-20-2006 @7:40PM jan said... spanish pimenton is a pepper..it has three varieties...sweet,bittersweet,and hot...hungarian paprika is an adequate substitute...but if yu can get any of the others try them...they are delightful !!
