If you recall from last week's episode of Bravo's Top Chef, there was no elimination and the chefs were told that they were going to be on probation. Some of the contestants may have been bending the rules about what ingredients they could use in the kitchen, not to mention the lapses in judgment made by chefs in earlier episodes, and others were suspicious enough to create a very tense situation that even the judges couldn't resolve quickly. As such, the chefs in this episode were all on parole, which meant that Tom Colicchio stayed in the kitchen to supervise. The result was that we got to see his reactions to the dishes much more clearly, though the chefs did not seem to be too affected by his presence.
This punishment, of sorts, was leftover from the previous week and coincidentally, the theme of this episode was also leftovers. Don't get too excited, though. The odds are that nothing they made would work out with the leftovers from Thanksgiving next week.
In the quickfire challenge, which was for immunity, the leftovers the chefs were given to work with were offal - the entrails and other leftover parts of the animal that are significantly less desirable than the regular meat, despite the fact that they regularly appear on the menus of high-end restaurants. The contestants had only 2 hours to create a dish that used tripe, oxtail, ox tongue, pig's blood, pig's feet, chicken feet, sweet breads, fish heads, beef cheeks or any one of a number of slightly stomach twisting options, a difficult task as such products are normally cooked very, very slowly for a long period of time. The guest judge was Michelle Bernstein, a critically acclaimed chef (and one-time ballerina!) based in Miami, who seemed to be an expert on offal.
By and large, the dishes turned out well. Most people used sweetbreads, but there was some oxtail, beef cheeks and a few other ingredients that were put to good use, as well. The worst two were Josie and Elia, with a tough oxtail and overly kidney-tasting kidney, respectively. The top three finishers were Cliff, Sam and Ilan, but Sam's dish that combined sweetbreads and some sort of savory beignets won him immunity.
For the elimination challenge, the chefs were asked to prepare a 6 course lunch for 60 Hollywood guests, including Jennifer Coolidge (a.k.a. Stiffler's Mom, as Michael pointed out), with only a short amount of time and using only what they could find in the kitchen they would be working in. The kitchen at Social Hollywood, however, was stocked with untypical leftovers, including foie gras, duck, scallops, soft shell crab and lots of fresh produce. The chefs had to work in pairs, one pair to a course.

- Cliff and Sam - Duo of Seared Diver Scallops & Seared Foie Gras with a Fig Gastrique
- Ilan and Michael - Mushroom Paella & Fried Soft Shell Crab
- Betty and Mia - Seared Duck Napoleon with Sweet Potatoes & Green Beans
- Josie and Marisa - Trio of palate cleansers, including Fennel, Apple and Citrus Salad
- Carlos and Elia - Trio of desserts, including Phyllo & Mascarpone Napoleon
The chefs did not communicate, so there was little flow to the lunch, but of bigger concern to the judges was the fact that the last three courses were very poorly conceived. All three were in the bottom this week. Betty and Mia did not need the excessive amount of undercooked puff pastry that they placed on their plates, yet they did not remove them, and their duck was very overcooked. Carlos and Elia had two desserts, sorbet and a pomegranate juice, that just did not taste very good and they opted to use an old jar of pomegranate juice instead of any of the fresh fruits or juices available to them. Josie and Marisa put out a product that tasted bad, looked bad and in which not a single element of the dish was actually cooked. Both of them were asked to pack their knives and go.
The top two dishes were Cliff and Sam's duo and Ilan and Mike's lovely paella. Both were well executed and delicious, but Ilan and Michael were declared the winners. Ilan was selected for the grand prize of going to cook at the South Beach Wine and Food festival with Michelle, but the bigger opportunity might be for Michael, since he redeemed himself in the eyes of the judges.
By the way, any fans of Anthony Bourdain should tune in next week. It looks like he's set to be the guest judge!

I really have to agree with Mia. Their dish was beautiful & looked good enough to eat. (Please notice my name is cook & not CHEF). I have never eaten duck & would not eat it rare anyway. It was wonderfully presented. According to "food" ethics, I know duck is supposed to be rare, but no one complained about it. They should have had a bidding again like they did with the kids.

Betty should have bowed our when she "misunderstood" the rules & cheated! When that didn't happen...her & Mia should have been eliminated this week. Josie got the shaft as she should have won once Betty's team admitted to cheating...I mean "misunderstanding" It almost makes me want to quit watching my fav show. And...leave Marcel alone...think of him as the litter runt & cut him some slack:)

I'm glad Sam and Cliff were paired off. They work
well together, and their dish was awsome. The odd
couple, Michael and Ilan, was the wildcard. The fact
that theirs was one of the top dishes doesn't surprise
me because they get along. I'm happy to see Michael as
part of a winning team for a change and Ilan get
immunity and a trip to South Beach. Too bad all four
of them couldn't go.

I have a question regarding this episode's challenge. If a chef had been eliminated, as expected, in episode 4, there would have been 11 chefs left for episode 5. How were they going to divide 11 chefs into teams? These challenges must be planned well in advance. You don't get 60 people to lunch on the spur of the moment, right? And these challenges take place only a day or two apart in real time. I understand that the audience is often manipulated by editing, but it appears we are now also being manipulated by plotting. I'd love to know how episode 4 and 5 looked on the producer's whiteboard before the season began.
It's becoming clear that the cream of the season 2 crop are Sam, Cliff, Betty, and Ilan, not necessarily in that order. Having said that, Josie should have lasted longer. Any chef familiar with vietnamese cuisine is cool with me.

I don't think Betty is as good as the other chefs. In fact I think all of the women are pretty week this time around. Betty appears stronger because many of the challenges have catered to what she is good at, I believe the more like this challenge they get the weaker she will become. Sam, Cliff, and Ilan are my top three. Unless one of them does something stupid I think they make it to the final episode. Marcel is a wild card to me. He's like Stephen from last year, only I think he's less likely to self destruct. I would expect him to be there until at least the last 5, probably 4.

Betty should have been long gone by now. That woman is a cheat and a liar. I can not believe that she actually used sugar when a great many of these children are probably diabetic or bordering on it. Her disregard for their health plus her lies would have sent her packing if I had been a judge. She is an embarrassment to the show,her foul mouth, her bullying,her inability to tell the truth,her refusal to take responsibility for herself does not speak well for her character. Plus, she is not that good of a chef. Get her off. And,m if Frank did not want his "stuff" touched, then maybe he should have acted more like an adult and picked up his personal items instead of spreading them all over the place. He is nearly 40 and needs to grow up. Marcel did nothing wrong. That area was a mess and he and Mike had to cook in there. Persoanlly, I think that all the women should go along with Frank. And all these bullies should stop picking on Marcel. What they are doing is what my son was taught NEVER to do. Shame on Betty and Frank for acting the the horse's behind!

Noisysky, I don't know the answer to your question, but I'm willing to speculate that they tailored the challenge specifically to eliminate two people at once in order to catch up. Had someone been eliminated they probably would have done either a different challenge alltogether or a different grouping.
As for women being weak this time around, my favorite overall chef is Elia, and according to some of the polls on the interwebs, I'm not the only one with that opinion.
