This is the first post in what will be a short series of great Thanksgiving dinner ideas from around the food blogs. Here's we're looking at what is possibly the most important part, or is at least the central part, of Thanksgiving dinner: the turkey and the stuffing/dressing. All of these recipes are from previous holiday celebrations because, as we all know, Thanksgiving comes but once a year and as much as we love the food and our families, the extra calories and the time-consuming preparation are something we can't do with all that often.

I adore to prepare Thanksgiving turkey for my family and friends which come every year. I like to please them ,to prepare for them something tasty.One of my favorites recipes of the main attribute of celebration is Turkey with apples in cranberry sauce.

One of my favourite things to stuff birds with is some type of carb mixed with pre-soaked dried mushrooms. The turkey juice soaks into the mushrooms while the fragrance of the mushrooms seep back into the turkey. mmm!

Thanksgiving is my favortie family holiday! My 16 year old daughter and I get up at 6AM. We start with making home-made stuffing. We take loaves of unsliced stuffing berad, break them up into a big pot. Meanwhile, fry up lots of onions and mushroom and spice them with oregane, garlic and LOTS of thyme. Dump the ontions and mushrooms into the bread, add milk until the mix is moist, but no gooey. Then we stuff the turkey, put it in a big pan, plaster it with extra-virgin olive oil and put it on our gas grill. We smoke it by placing wet wood chips on the fire grill (Mesquite works best for us.) I keep the fire a bit high, so I save water the wood soaks in and add more "juice" as the wood burns up. Using a combination of smoking and grilling,we have a delicious smoked turkey in about 5 - 6 hours. The meat just falls off the bird, and has that delicious smoked flavor!
