I know that I saw some good looking strawberries in the store this weekend, so I hope strawberry season isn't quite over yet and that I'll be able to make my own version of this fantastic Strawberries and Cream cupcake that Santos, from Scent of Green Bananas, photographed at a new cupcakery in Manila. The cake is a play on a classic strawberry shortcake, with a vanilla cupcake base topped off with sliced strawberries and a mound of thick whipped cream frosting. I love the way that the "frosting" was piped on to the cake using a very large tipped pastry bag, since it looks elegant but much less fussy than a rose or anything else that would have to be carefully styled. Santos said that the cake wasn't quite as good as it looked because it was sitting in a refrigerated case, but this problem could be easily avoided at home, and as long as you get good strawberries, you'll end up with a fantastic dessert.
