Researchers at Loma Linda University in California have just completed a new study that indicated eating pecans can reduce the risk of heart disease, adding another food to the ever growing list of things that are good-for-you. Published in the Journal of Nutritional Research, scientists say that part of the positive effect was attributed to a high vitamin E content in the nuts. To simply put the results, phytonutrients (nutrients found in plants) in the pecans help to prevent oxidation of fats in the blood ("a process akin to rusting"), which is a good thing for your body.
This is good news for anyone who likes pecans, since the nuts are often overlooked in favor of almonds and other nuts that are slightly lower in fat, although the majority of the fat in pecans is unsaturated.
If you want to get a few more pecans into your diet, try adding them to salads or eating a handful as a snack. For a slightly less healthy - but possibly more delicious - way to eat a few more pecans, try:

I have a recipe for vegetarian burgers and another for vegetarian meat loaf and they both have pecans in them and they are wonderful. Even my husband loves them and he ate meat for over 50 years.

10-06-2006 @6:08PM Anna Lee Rogers said... I have been eating almonds as a protein boost for years. I carry them in my purse and eat 6 or 7 to carry me over until I can eat lunch or dinner. It clears the "lack of protein fog" I get when I haven't had enough to eat. Adding pecans in my bag will be an added bonus. I was under the impression that most nuts were good for a protein boost but only almonds were the better choice.

Holiday recipes and cooking...pecan pies, sweet potato casserole, fruitcakes, cookies, sugared pecans...just wouldn't be the same without them! Cooking or toasting pecans will destroy much of the nutrients, hence, I eat them raw to get the most out of them. After saying that, I can't resist pecan pie al amode. If anyone out there know how to make southern pecan pie without cooking it please advise.
