There are lots of version of what we call the sno-cone - shaved or crushed ice drizzled with colorful syrups or covered with toppings. However, there's a new dessert that's being sold from a roadside stand in Tokyo that's causing quite a flurry of excitement. Literally, a flurry. Why? It's just a sno-cone, right? Not exactly. The dessert is called "xue hua bin," and unlike other icy desserts, it tastes like freshly fallen snow because it replicates the texture -- "dry, powdery, airy crystals that crunch lightly in your mouth before quickly melting." Xue hua bin was popular in Taiwan before it made its way east to Japan. Next thing you know, xue hua bin will start a craze here in the US the way boba (bubble tea) did.
