Food Porn: Healthy Cheesecake

It may look like regular cheesecake, but this is no ordinary dessert. It has minimal fat and no cholesterol, eggs or dairy. The tempting treat above is a slice of excellent vegan cheesecake, photographed by Susan of the Fat Free Vegan Kitchen but made for her birthday by her husband. The cheesecake is made with silken tofu and Tofutti's Better than Cream Cheese, which gives it a very similar flavor to a "real" cheesecake. Unlike so many other vegan cheesecakes, this one is actually baked in the oven, so it doesn't have that overly gelatinous/tofu texture that so many attempts at veganization produce. Of course, a vegan cheesecake is not going to some out the same as a "real" cheesecake even under the best of circumstances, but if you want a healthy alternative or don't eat eggs or dairy, this recipe is definitely worth a look.

9-08-2006 @6:46PM peggy said... It's a pretty good recipe. I've tried it. But I still prefer the taste of REAL cream cheese cake. When I want a gooey and rich dessert, I'm going for the full fat, 100% sugary stuff. I think if you have to go through the trouble of making a "healthy dessert," why not just go for the real-deal healthy dessert -- how about trying a nice fresh organic apple or bunch of grapes after dinner?

We love our fresh fruits. That said, it really is possible to burn out on the taste of certain fruits when one eats them daily for extended periods of time.

Enter the healthy desserts at this point. My wife and I are currently on an apple moratorium because we have had it up to the eyebrows with apples. I will be trying this cheesecake recipe and my thanks go out to Nicole for this post.

I'm not a cheesecake expert but I have tried unsuccessfully to make a healthy cheesecake. As good as I am at cooking I just can't seem to make my cheesecake experiments work. This recipe may just be the breakthrough to taste I've been seeking.

I have many healthy dessert recipes. We don't eat desserts all that often since neither of us has much appetite for sweets but that doesn't mean that we never eat them. If this one proves successful I can add another page to my cookbook.
