While there are many barbecue books that focus on the main course, some mention side dishes only in passing, if at all. Yes, but does it include corn pudding? I came across this particular side dish in Washington, DC, of all places, at an amazing restaurant called Rocklands (the dish is called "Texas Corn Pudding" there). I'm from the Triad of North Carolina (Winston-Salem/Greensboro/High Point), and our sides are usually limited to cole slaw, baked beans and hush puppies. Corn pudding is extremely tasty!
