
Since tomatoes seem to ripen all at the same time, those who grow their own in summer often struggle with ways to use them up quickly. Sauces and salads are very nice, as are fresh tomatoes when eaten out of hand, but a simple open-faced tomato sandwich, as Dawna from Always in the Kitchen made, might be an even better application. Her sandwich starts with a piece of toasted, crusty bread (sourdough might work very well here) and is topped with slices of red onion, tomato, mozzarella cheese and a few sprigs of fresh basil. She also added a generous amount of salt and pepper. Simple though it seems, a sandwich like this one is guaranteed to be one fantastic lunch.

I have quit eating tomatoes... 50 cents a pound is a reasonable price. and what's being sold for tomatoes these days is not worth 5 cents a pound.. also.. there isn't that much nutrition in a tomato anyway. Whatever is there, is available cheaper elsewhere.

Spread a generous spoonful of mayonaisse on each tomato slice then sprinkle with parmesan cheese. Pat cheese down in mayonaisse then place in broiler for 4-6 minutes or until cheese is browned just a little. Very easy and tasty.

8-11-2006 @5:32PM sam said... I like to cut up about 5 nice sized Jersey tomatoes, add 2 cans of chick peas, a handful of fresh chopped basil, 1/2 of a red onion,a couple of pinches of kosher salt and splash with some very fine olive oil, chill and chow. My favorite summer tomatoe dish!

It's a daily treat.To make it special we may add cucumber, or bacon and egg. I hate when summer is over and no more tomatoes from the garden are coming in. Store bought are NOT the same.

2. To make a grilled cheese sandwich, add a thick slice of fresh tomato between two slices of Velvetta cheese, spread a thin layer of real butter on the outside of the slices of bread and pan fry. My kids love these grilled cheese sandwiches.

I know of very few natives to this area that actually like tomatoes (without being doctored up for salsa) since the ones grown here are mealy and tasteless. thanks!

Slice them and put cottage cheese on top.
Slice them and top with a bit of mayo or salad dressing.
Tomatoes are great chopped up with corn, with home fried potatoes (esp. "new" potatoes), and they taste wonderful with eggs for breakfast.
As some have mentioned, BLT's are great. You can also eat BCT's if you don't happen to have any lettuce. (Cheese of your choice, I like cheddar).
I love tomatoes!

Have had a hard year and money is tight so this has helped my family, and I have told others. They take dontations and I always leave one. But I always leave one. tomatoes, cukes and squash oh yeah!The south rules!
