Did you know that blackberries and artichoke hearts have higher antioxidant levels than chocolate, coffee, tea or red wine, for that matter? Me neither.
A recent study of 1,000 foods and beverages shows that the top five are blackberries, Welch's 100% Grape Juice, Ocean Mist artichoke hearts, walnuts and strawberries. These items beat out blueberries, red wine, chocolate, coffee and tea, all often cited for high levels of antioxidants. The real surprise to me was the artichoke hearts. Guess I'll have to start eating more antipasto.
The study was conducted by researchers from the University of Oslo, Norway, Virginia Polytechnic Institute and State University, and the University of Minnesota.

Liz, look in some Italian cookbooks about the artichoke. It's a little unusual, but, I think, very tasty. I've had it in appetizers and in pasta dishes. It's often included in antipasti platters and on brushcetta.

Artichokes are NOT high in calories. The quartered artichokes in a jar have only 7 calories per serving and no fat or cholesterol. You can even eat the whole 12 oz jar and it's still only 84 calories.

Artichokes are so easy and low in calories. We've enjoyed them my whole life, and not the jarred hearts either! We usually just steam and enjoy them with vinegarette. It's a bit more work, but so delicious. I actually like mine plain without any dressing.

Not everyone looking for great antioxidants is yet committed to a completely healthy diet. For those of you like me, quarte or slice a half dozen artichoke hearts and throw them in your spaghetti sauce the last ten minutes of cooking. They are tender and cook quickly. I fear that long cooking may neutralize the antioxident benifit.
