
This summery strawberry pie is one of the entries in this month's Does My Blog Look Good in This? photography competition (as are a couple other pictures that have been featured as food porn here). The pie is from Rachael, at Fresh Approach Cooking, and is an absolutely fantastic way to put fresh berries to good use. There are two tricks to making a pie with summer berries: (1) double bake the crust so it has a chance to firm up and (2) use a thick crust. No matter how much sugar you add to gel the berries together, good ones always create a juicy filling and the thicker the crust, the more of it will stay crisp and flakey. It will also be able to support the individual slices of pie, rather than falling apart on your plate. The pie will still taste good if it falls apart and, as a tip to file away for serving, a generous scoop of whipped cream will hide a multitude of sins.

7-25-2006 @4:13PM Laura said... That crust is simply beautiful. I must admit though, I'm not a fan of cooked strawberries (unless it's the jam or preserves variety). I prefer a graham cracker crust and fresh strawberries that have been macerating in sugar. But, thats me.

Surely this would have been far better if the fresh strawberries were added after the crust had finished cooking.

A true Strawberry Pie should have fresh, uncooked strawberries, a homemade strawberry & sugar sauce to go over it, and fresh whipped cream.

Pre-bake your pie crust; once it has cooled, slice a mountain of fresh cleaned organic berries into the pie crust; make a nice blend of Agave Nector and crushed strawberries (a cup and a half is way enough to cover and sweeten the berries in the pie). Top each messy slice (these rarely slice neatly -- but who cares!) with a huge spoonfull or two of very lightly sweetened whipped cream (I use heavy whipped cream, a little orange extract or rosewater instead of vanilla, super fine sugar or birch sugar, whip it until it is just soft). Voila!!! My mouth is watering at the thought... You can do the same with peaches, nectarines, or any fresh berries, or mix of berries, peaches, nectarines. Fresh, rather than cooked, is so very, very yummy that you'll never want a baked strawberry pie again.

As for the cooked versus uncooked berry comments, my personal philosophy of life is "Don't Yuck Someones Yum." It's a good catch all, and certainly applies here.
