
I have decided that the homemade version of the Egg McMuffin, which is the fast food version of Eggs Benedict, is the best thing to eat on a late Sunday morning. Granted, the point of McDonald's Egg McMuffin in sandwich form is to make it "mobile," so it might seem unnecessary at home, but hey, the fried egg inside is much easier than poaching an egg (not that poaching eggs is difficult).

I make these before work--they are fairly quick and cand make a good one pot meal (a 12" skillet gives enough room to toast buns (or bread....either with melted cheese), fry a sausage patty (or bacon or ham), and fry or poach an egg (a good egg ring can keep youar poaching liquid confined).
The mobile aspect is perfect for dashing to your car or the bus/train.
