Slashfood Ate (8): Chilled soups for summer

I love soup.

Unfortunately, in the high heat of summer, just the idea of sticking my face down into a steaming hot bowl of soup, let alone standing over a hot stove in an equally hot kitchen all day to cook the soup, makes me sweat. So for summer, here are eight great chilled soups:

  1. Gazpacho from Simply Recipes that simply requires prcessing fresh vegetables and seasonings, then chilling overnight in the fridge.
  2. A cool take on Borscht, beet soup, from La Tartine Gourmand
  3. Chilled Avocado and Coriander Soup from The Traveler's Lunchbox
  4. The Accidental Hedonist serves Chilled Yogurt and Cucumber Soup
  5. Veloute Froid de Courgette au Parmesan is appropriately created by Clotilde of Chocolate and Zucchini
  6. CityMama sharesnot one, but two soups: Cold Buttermilk and Shrimp Soup and Chilled Avocado Soup
  7. You can't go wrong with a classic like Vichyssoise at Chronicles of a Curious Cook
  8. A recipe from AllRecipes for Ajo Blanco, a chilled garlic soup originating from Spain
