
I love soup.
Unfortunately, in the high heat of summer, just the idea of sticking my face down into a steaming hot bowl of soup, let alone standing over a hot stove in an equally hot kitchen all day to cook the soup, makes me sweat. So for summer, here are eight great chilled soups:

Love beet soup with garlic and a dollop of creme fresh or sour cream ice cold vodka and a good hunk of farm bread!
