In case you didn't already know, I am a huge fan of the oft-overlooked Iceberg lettuce (mostly because I could eat a steakhouse Iceberg Wedge every night). With all the other darker, greener, "healthier" greens out there, many people find Iceberg lettuce boring.
But now, a small company in Salinas, CA, Boggiatto Produce, has made Iceberg lettuce delicate by growing them in a size no larger than a twelve-inch softball. Michael Boggiatto, president of the company that produces the Iceberg babies, says that the tiny lettuce "has more going for it than just the cuteness factor. It has the snap of conventional iceberg, looks cool on the plate and tastes a little sweeter."
Does this mean it won't be an Iceberg Wedge anymore, but an Iceberg Hemisphere? Or maybe the whole Iceberg Head?
