Just about everything that can be grilled is grilled by Steven Raichlen in the pages of How to Grill. It isn't subtitled "The complete Illustrated Book of Barbecue Techniques" for nothing. Raichlen starts with the basics and covers everything from burgers to brisket to creme brulee. Even experienced grillers will be sure to learn something new, whether it's about proper tying techniques or cold smoking. I like the fact that it is available paperback, since I can't really picture lugging around a heavy, shiny hardback book back and forth to the grill. Paperback seems more casual, more grill-appropriate. So, while you're tackling Sarah's question about charcoal versus gas, (which Raichlen also goes over in this book) you might as well start bookmarking all the recipes you want to try.

I LOVE this cookbook. I never really knew how to grill, other than throwing some meat on the flame. Now I can grill like a pro. Anyone with a grill or smoker should have this book. When I bought the book I was trying to find out how to do a beer can chicken. I'm glad I can do so much more now.

I have learned all kinds of techniques and now don't even consider grilling anything without first looking it up in this book. This should be a staple in everyone's cookbook collection.

I have Raichlen's Barbeque Bible and consider that my favorite cookbook. I can just sit and read about the different kinds of barbeque all over the world. If How to Grill is half as good, I'll have go find me a copy.

I've seen this joker's show. This guy doesn't know his charcoal from his elbow. I actually saw this guy cook trout over opens coals. A trout you have to sit there and hold for a full ten minutes a side. That isn't grilling, it's goofy campfire cooking I wouldn't put my worst enemy through.
