When you think about wedding cakes, chances are that you envision a tall, elegant dessert. It has sleek sides
and might be adorned with splashes of sugar roses and pounds of buttercream frosting. Even if the cake is simple,
ungarnished with excesses of sugar sculpture and fondant shapes, a wedding cake will always be elegant.
At least, almost always.
More and more couples are moving away from the traditional wedding cake model, having cupcake towers so that each guest can have an individual, elaborately decorated cake. The cupcakes maintain the elegance of tradition, but allow for an infusion of fun. Even further from the standard, however, is the snack-food cake. A snack food cake can be made of anything from Twinkies to Snowballs and chocolate donuts. What I didn't realize was how much the trend towards down-market "cakes" was catching on until I saw a "cake" of homemade Ding Dongs in the New York Times wedding announcements over the weekend.
Would you have wanted this at your wedding? Are you considering it for the future? I can't say that I would want it, but I would definitely serve ice cold milk, and not champagne, if I did.

My corrected comment: "A snack food wedding cake is very much so incredibly white trash. And if you disagree, chances are that YOU are in fact white trash."

I say, a wedding is about the PARTNERS, not the trappings, and it's fun -- and admirable -- to "think sideways -- and better to have a reception dessert of something TASTY that people will actually EAT, rather than some towering contrivance of a cake that was really made for show and tastes like paper. It's their day, so let them have whatever dessert their hearts and tastebuds desire.
My opinion is, the snack wedding cake is a great idea IF IT'S DONE RIGHT!!!! I had read an article where the couple made a cake out of snack treats but iced it and decorated it to look like a wedding cake. One couple even made a beautifully decorated cake -- out of Twinkies -- to look like a castle. THAT, I can see, but the thing in this picture was a whole 'nother bowl of frosting.
The item in the photo didn't look like a wedding cake. It looked like a heap of snack food.
They could have covered the snack cake mountain with frosting and fondant and candies and ornaments. Can't afford fondant? Use decorating icing. Trim the edges with M&Ms or other small candies or candied fruits -- or maybe Junior Mints dipped in melted white chocolate for a dark and white chocolate delight. If I had found my Heart's True Hero and we were to tie the golden cord, I would definitely not rule out the snack-food-cake idea -- but for crying in Manhattan, I would make some attempt to decorate the thing and make it LOOK nice! That way I could come up with a dessert that's beautiful, tasty, economical, unique, and fun.
I'm sorry, to me, the mound of junk food on the plate in the photo looked like someone was being lazy.
After all, weddings are supposed to be romantic, and something that looks like a cake looks more romantic on a wedding reception table than something that just looks like a heap o' food!

For those of you in the Seattle area, you know that Than Brothers makes the best pho in Seattle, as well as the most incredible creme puffs. Light, airy, delightful and most of all, fun... perfect for a wedding cake!!

For about $25 + basic tools and just 4 weeks at 2 hrs a week you can learn to make your own cake complete with roses. Or you can look online for free instruction or buy a book. You can have a beautiful cake that you can be proud to say you made :)
