Though we are not Jewish, my daughter attends a Jewish preschool.
This week, in preparation for Passover, her school has been sending home wonderful hand-outs full of activities on how
to celebrate and honor this holiday.
My favorite hand-out, of course, was the one with five pages of
Passover recipes including these matzah recipes. These would be fun to do with kids if you've got 'em.
Chocolate Matzah
1 large package chocolate chips
1 tbsp margarine
4 matzah
Melt chocolate and margarine over low heat. Stir to prevent burning. Break matzah into pieces and stir into
chocolate. Cover a cookie sheet with waxed paper. Pour chocolate matzah mixture onto waxed paper. Cover with another
sheet of waxed paper and flatten with a rolling pin. Refrigerate. When mixture hardens, peel off waxed paper and break
chocolate into pieces.
Matzah Brei
4 Matzah
3 tablespoons butter or margarine
3 beaten eggs
Break
the matzah into penny-sized pieces and put them into a bowl. Pout water over, let sit to soften, drain. Press out excess
water by squeezing the matzah in your hands.
Melt the butter in a frying pan over medium flame and add the
matzah. Stir for a minute or two to toast it. Add the beaten eggs mixing thoroughly. Fry for three minutes, take off
the stove and eat at once topped with sugar, syrup, or jelly, or for a savory treat, with grilled onions, salt and
pepper.
Matzah Pizza
1 round tea matzah or regular matzah
3-4 tbsp. crushed tomatoes
(or tomato sauce)
shredded cheese
fresh herbs (oregano, marjoram)
Preheat oven to 350º. Spread
tomatoes onto matzah. Top with cheese. Sprinkle with herbs. Bake for about 5 minutes until cheese melts. Serve.
