I recently saw a post about bacon waffles on Jeremy
Zawodny's blog. I'd never heard of such a thing, but apparently these Belgian waffles fortified with bacon are a
standard menu item at a California-based chain of restaurants called Stacks'. Curious, I started looking around and found that even
Epicurious has a recipe for a similar version
(right), made with cornmeal. Baking.about.com also
has a version. I feel like I've eaten a fair amount of diner food, but I've never come across these before. Chicken and
waffles, sure. Is the bacon waffle a regional thing? Yet another reason I need a waffle iron. [Image: Epicurious.com]

At my mother's restaurant, I have always had either crumbled bacon or sausage added to my pancakes.

My mom would make bacon waffles (Californian living in Texas). Get a waffle iron. They are tons of fun and tolerant to experimentation. I've done regular, chocolate, savory cheese, blueberry, and cornbread varieties. There's also other versions like the belgian and liege. Liege are sweet desert waffles that I got addicted to on a recent trip to Europe. Waffles freeze and reheat incredibly well, so I like making them when I know there's going to be leftover.

The Original Pancake House (with locations all over) has Bacon Waffles (and pancakes). I've never indulged, but I believe they have bacon crumbled in them.

Oh, maaaan! Now I've got a bacon waffle jones going!! We had them growing up, too, most often made in a cornmeal version per my mama's Southern roots.

My Grandma used to make us bacon waffles..get this...you poured the batter into a waffle iron, laid the bacon across the batter and closed the iron. When the waffles were done, so was the bacon. No offense, but HA to you e-coli paranoid food patrols out there...38 yrs old and still kicking! PS by the way, maple syrup makes it taste just that much better!

Had a version of this for the first time while living in Switzerland. At a cultural fair, a woman in traditional dress was making very thin (almost wafer-like) waffles in a long-handled iron over an open fire in the street. They had a generous amount of crumbled bacon mixed in. The small amount of grease from the bacon permeated them and kept the waffles from sticking to the iron. I got a similar waffle iron to make them while camping. Love those things!
