I recently saw a post about bacon waffles on Jeremy
Zawodny's blog. I'd never heard of such a thing, but apparently these Belgian waffles fortified with bacon are a
standard menu item at a California-based chain of restaurants called Stacks'. Curious, I started looking around and found that even
Epicurious has a recipe for a similar version
(right), made with cornmeal. Baking.about.com also
has a version. I feel like I've eaten a fair amount of diner food, but I've never come across these before. Chicken and
waffles, sure. Is the bacon waffle a regional thing? Yet another reason I need a waffle iron. [Image: Epicurious.com]
