Poultry innovator, Robert C. Baker
died at his home in New York State this week. Baker, 84, was a professor of food science at Cornell University and
invented dozens of poultry products, including the chicken nugget back in the 1950s. "They weren't too popular
when they came out," he said in a 2004 interview, though sentiments about the crispy, bite-sized morsels of
chicken have obviously changed. He came up with the way to keep the bread coating on the chicken. Not only did he found
Cornell's Institute of Food Science and marketing, Baker made chicken barbecue the unofficial
icon of Cornell. His repertoire also included dozens of products in addition to the nuggets, including ground
poultry, turkey hams and poultry hot dogs.
