Cheesecake for St. Patrick's Day

bailey's irish cream and coffee cheesecakeNow, we can most certainly put our bottles of green food coloring that we've neglected since Christmas to good use to dye whipped cream or other things, but I am not always so fond of green-tinted foods unless they're green to begin with.

We've baked a Bailey's Irish Cream cheesecake here before at Slashfood, but I've just stumbled across another recipe for a cheesecake that uses Bailey's and Murphy's stout. Yes! Stout! And you have to go all out Irish by using Irish digestive biscuits for the crumb crust, and Irish butter. (I'll have to stick with plain old graham crackers, unfortunately).
