Food Porn: Pancakes

Pancakes with Walnut Cream and Butterscotch Sauce.

I was after something a little different this year, something away from the "standard" sugar and lemon, and these little wonders from a recipe in Delicious Magazine fitted the bill perfectly.

The pancake recipe was the third one from the list detailed earlier. The filling is double cream (300ml) whipped to stiffness before the addition of sifted icing sugar (1½ tbsp) , brandy (1tbsp) and 2 tablespoons of chopped walnuts. The recipe also called for 2 tbsp Camp Chicory and Coffee Essence but I missed that out as I didn't have any.

Over the top is a little pouring of butterscotch sauce. This is made form 100g muscovado sugar, 80g unsalted butter and 125ml double cream. Place all over a medium heat and dissolve the sugar. Then increase the heat and cook, without stirring, for 3-4 minutes.

You'd think someone who posts on a FOOD blog would know these things. I think the recipe sounds INCREDIBLE- can't wait to try it! (maybe even for breakfast...) :)

INSTEAD OF COOKING THE BUTTERSCOTCH SAUCE MYSELF(TOO MUCH TIME INVOLVED) I DRIZZLED HEATED BUTTERSCOTCH SAUCE, THINNED WITH A LITTLE MILK, OVER THE TOP AND LET IT RUN DOWN THE SIDES. ADDING A FEW WHOLE WALNUTS ON TOP FOR GARNISH. WONDERFUL IDEA!

Total YUM! Oh and FYI for the first poster- I think it's safe to say that the majority of humans understand that anything in excess is bad for you. So please get off your granola box, thank you! (A note to "E" in #6, I am 38, 5'6" and 115 pounds at 13% body fat & 98 HDL...I think I can splurge on an incredible recipe like this...but thanks for your concern...:P) And to Andrew, THANK YOU- can't WAIT to make this dessert for guests next weekend! It's my new favourite! :)

4-20-2006 @12:02AM Andrew said... I dunno hopeless some people. By entering into google convert xxg to cups or ounces it returned the following which I have rounded...

300 ml = 1.27 US cup
100 grams = 3.53 ounces
80 grams = 2.8 ounces
125 ml = 0.53 US cup

For the pancake recipe
150 grams = 5.3 ounces

Dont forget these pancakes are THIN and the first one never works and has to be thrown away.

Thank GOD, others don't worry about every little calorie or cholesterol. I'm 69 yrs. old and have been doing "farmstyle" cooking (frying my chicken and baking my biscuits and piecrusts with LARD!) for 55 years. I'm slender and healthy. It's called GENES, darling. And my style of cooking tastes much better than yours, I'm sure, and absolutely delights my guests who come for my homemade chicken and noodles. This recipe is AWESOME!
