Lemon Ginger Ice in Sugared Lemon Cups

lemon ginger ice in sugared lemon cups

If a "snow" topped truffle cookie isn't enough to keep you excited during the Winter Olympics through the rest of this weekend, then a shimmery, shivery lemon ginger slushie in a pretty little sugared lemon cup might be. The recipe is adapted from a love letter that Tyler Florence wrote to me last year.

Okay, actually, I'd love to think Tyler wrote me a love letter, but it's actually his beautiful cookbook, Eat This Book. While the rest of the dessert section in his book is a little ho-hum, the lemon ginger ice stood out, and is a perfect pairing with all that ice that'll go a spraying during the hockey games. Of course, with just lemon juice, ginger, and sugar, there's no fat, keeping you trim enough to fit into that tiny little skating outfit.
