Still don't know what to take to that Super Bowl
potluck party? You don't need to impress anyone with your mad culinary skillz
at a football party, so save the foie gras terrine recipe for another day, and just bring spinach dip.Spinach Dip
1 cup of mayonnaise
1 package Knorr Vegetable Soup Mix (a.k.a. "Recipe Mix")
1 pkg. frozen chopped spinach, thawed and squeezed dry
2 green onions (scallions), thinly sliced
1 pint of sour cream
Combine all ingredients. Cover and chill two hours or over night. Serve with crudités or bread chunks.

You didn't really say *frozen* spinach, did you? Please try this with fresh once and tell me what you think. Wash the greens -- or tear open the bag of precleaned -- and toss in the food processor for a few pulses, then mix as usual. Makes all the difference in the world in this dip.

Why, yes I did say frozen spinach, kitchenmage! I will try your method, but I don't have a problem with frozen spinach in this dip at all. It's trashy goodness! It ain't supposed to be fancy! ;-)

You can also spread it on flour tortillas, roll up, refrigerate overnight, and slice--making Spinach Rolls--my semi-kitschy but still impressive and defintiely easy potluck standby.
Oh, I use Hidden Valley Ranch dressing though. I also add some chopped (canned) water chestnut, which people always like.
