No Super Bowl party
is complete without the requisite 7-layer Mexican dip. My recipe was handed down to me by an older family friend with
the notes "Men love this!" scrawled across it...so hands off, ladies! It serves a large group so you can
divide this between two plates. And, please, serve only with Fritos Scoops. Remember, I take my football food
seriously, and just like how you can only serve clam dip with Ruffles, there is just no substitute for Fritos in this
recipe.
Walking Taco
Note: There is some debate over the origin of the name
(thanks, commenters!). Walking Taco is the name of the recipe given to me.
2 cans of refried beans
combined with 1 packet of taco seasoning mix
1 tub of guacamole (e.g. the kind where you mix the salsa
in, or make your own)
1 pint of sour cream
2 4 oz. cans diced green chiles (or use one can of
jalapeños and one can of green chiles if you want it spicy)
2 4 oz. can of sliced black olives (or a
combination of green and black olives)
4 green onions thinly sliced
2 tomatoes, seeded and chopped
2/3
pounds of sharp cheddar grated
Divide bean mixture between two plates. Spread guacamole over both plates of
beans. Layer remaining ingredients between the two plates. Top both with cheese. Serve cold or at room temp with Fritos
Scoops.

Your recipe sounds good and I will make it. It has been my experience however that "Walking Tacos" were prepared with all the traditional Taco ingredients put into a bag of Fritos and then the Fritos were eaten from the bag, I have had them fixed this way and sold from a cart at a festival for instance. An interesting way to eat your Tacos !

i totally remember something about putting something into a fritos bag and eating it right out of the bag - i think however, it was chili. lol! and to think they even HAVE chili cheese flavored fritos!

If you want to make it differently AND not violate the Stefania's recipe above, use tortilla scoops and for your dip layer in glass 8x12 pan: 1 can refried beans (if too thick, thin w/ some beef broth); shredded cheddar cheese; 1 lb. ground beef/turkey cooked with taco seasoning; more shredded cheese; shredded lettuce; a 16 oz jar of salsa (Pace Cilantro is our favorite); then cover/seal with sour cream ... then scatter chopped green onions, chopped tomatoes (or red peppers if you have a tomato hater), sliced black olives and shredded cheddar cheese ... it is very pretty and we NEVER have left-overs!

I have to agree, this is an excellent recipe not only for men but I know a few women who really like it too!! My recipe has one additional ingredient - cream cheese at room temperature to add to the sour cream and taco seasoning, yummmmmmmmmmm! Oh one more thing if you haven't tried this - when you mix-up the salsa
layer, you can use a celantro kind of concoction consisting of diced tomatoes,thinly sliced / diced white onions, chopped fresh celantro of course,fresh
squeezed lime juice and a little salt to taste and you have a zing to your layer dip that is mouth watering...Enjoy!!

Those are all good, but if you want something that will have everyone oooooing and aaahhhhing, put a layer of cream cheese on the bottom of the glass pan and bake for 20 minutes before you top with the sour cream.....its gooey and GREAT! Give it a whurl and I promise everyone will love it!

Instead of canned pinto beans, use 2 cans of Fritos Bean Dip (on the Chip aisle). It's thinner, smoother, is already seasoned.

Try this variation...Instead of the taco seasoning mix your sour cream with a packet of Hidden Valley Ranch Dressing mix then layer as instructed. It's great!

Couldn't agree more with the #1 comment from Frank. This is a good recipe but it is a recipe for 7-Layer Dip. The term 'Walking Taco' was derived from fairs and festivals where traditional taco ingredients are placed inside a bag of chips and then carried around to eat...hence 'Walking Taco'. The only way this recipe could possibly fall under a 'Walking Taco' is if someone carried the plate around to everyone as they dipped their chips into it. Very bad misnomer for a good recipe!

if you stuff the mixture into a flour tortilla (corn tastes better but it's kind of small), fold it over and bake @ 350 for about 10 min, you can walk around with it. The tortilla shell will have stiffened. Of course, it helps to wrap a piece of triangle foil around the bottm, like a diaper (for the Staten Islanders, think Mr Taco on Victory Blvd - the one which had veggie burritos).

I've been serving this dish since 1987 and men have devoured it EVERY time. First empty dish at any gathering. 1st layer: refried beans, then lots of chopped white onion, then, guacamole, next sour cream (mixed night) before w/pkg. taco seasoning, next sprinkle lots of chopped: green onions, jalapeno, green & black olives, tomatoes and finally two cups of shredded mexican mix cheeses. Good with Fritoes/Taco chips. I always called it Mexican S_ _ T Dip.
