Parmesan Biscuits Part 2

Parmesan BicuitsYesterday I was half way though making Parmesan Biscuits (actually Parmesan and Manchego) when the recipe stopped me in my tracks with a 'chill overnight' instruction. Well it's been overnight and the final stage of this - terribly complicated recipe (not) begins. Or concludes. Or something.  

After resting the dough overnight the cylinder is now brushed with beaten egg and rolled in a mix of sesame and nigella seeds to coat all over. Of course I have neither so pounded some black pepper corns and chili flakes together and used those instead.

To Finish

  • 1 egg lightly beaten
  • 2 tablespoons sesame seeds
  • 2 tablespoons black onion (nigella) seeds

The coated tube is now rested for a further hour before being cut into slices about 5mm thick. Lay on a baking sheet well spaced and bake at 180C for 20 - 25 minutes until golden brown. Cool and then consume.

They recommend these as a good accompaniment to any aperitif - dry sherry is suggested but I imagine Champagne or other bubbly would be good or any dry white wine. The original recipe called for double the quantity of ingredients I used and stated this would make 40 odd biscuits. I used half the amounts and still came away with 30 odd bite sized pieces. They are good though, a touch salty, cheesey but not overpoweringly so and lovely with the peppery bite on the finish. Served with a tomato dip and a fresh basil leaf or two.

the camera is the canon eos 350d the lens is an 18-55 (i think) I have a 70-200mm too but not yet used it. Have you seen the others in the series on spittoonextra?
