Some baking experiences are about the presentation; about artistry with cookies, food coloring and piping tips. Other baking experiences are about turning out something fast and universally delicious. If you're on the latter of these days - or if you have 29 minutes to make cookies for your child's holiday party - I can only recommend the caramel, buttery simplicity of butterscotch brownies from Betty Crocker's Cooky Book (my holiday cookie bible). It's especially handy if you're running low on butter - it only calls for 1/4 cup. The recipe:

Heat oven to 350 degrees. Melt 1/4 cup softened butter and remove from heat; stir in one cup brown sugar and cool for a few minutes. And one egg and mix well. In a separate bowl, stir together 3/4 cup flour, 1 teaspoon baking powder and 1/2 teaspoon salt, and stir into butter mixture. Add in 1/2 teaspoon vanilla. Spread into greased 9x9 baking dish and bake for about 25 minutes. Cool, cut into squares, and off you go.
