Lindt Releases Noirissme

NoirissmeIf you are among the chocolate lovers who constantly crave the very darkest, bitter richness you can find, than Lindt’s new chocolate bar is for you. This week, Lindt debuted its 99% cacao-solid chocolate bar, Noirissme. To ensure that eaters properly experience the bar, it comes with a test of “tasting instructions”, which prepare the taster for five distinct taste sensations, beginning with acidity, astringency and ending with fruitiness.

The bar is currently in limited release and is being featured in stores such as the Lindt concept stores in Australia and the Sony Plaza Boutiques in Japan. Perhaps I like dark chocolate more than the average consumer, but I do have my limits. My limits currently stop at about 85% cacao bars because, while I enjoy the bittersweet, fruity flavors of the dark chocolate, I have found that chocolates darker than that (and even some lower cacao-content varieties) are simply bit too bitter for me. I doo, love Lindt, however, so I will try this bar if I can get ahold of it. In the meantime, I’ll stick to one of my very favorites: Lindt Excellence 70%.

One of the things that I think makes chocolate so wonderful is not the cocoa solids but the cocoa butter. It's a wonderful fat that dissolves at body temperature, has an exceptionally buttery texture and is a great base the complex flavors of good quality chocolate. These high density chocolates leave little room for the cocoa butter, so they end up being rather chalky in my estimation. 70% is about as high as I go for just plain eating.

I just bought both the Lindt Excellence 70% and 85% recently (was so surprised that it was being sold on my university campus!) since I've discovered a preference for dark chocolate. Realized 85% was just a tad too dark for my taste, but glad I tried it anyway. The rest of the bar went into a batch of deliciously chocolate-y brownies!

The 99% sounds intriguing. It'll probably be too bitter for me too, but heck, I'll definitely try it at least once.

12-06-2005 @3:57PM Carl said... Lindt 99% has been available here in Canada for about a year now, maybe even longer. It's alright, but I think they're going more for "extreme shock value" with this product than actual quality. I find the chocolate from other companies (such as Vivani's organic green tea chocolate!) much better than Lindt.
