If you're a tofu lover like me, you've probably asked yourself how tofu is actually made. Well, if you have 2 cups of soy beans, some nigari (magnesium chloride), and some time on your hands, you can make your own fresh tofu. During the process you will make soy milk, which at the end will coagulate with the help of the nigari into the wonderful tofu we all love. Also, you will get okara (soy fiber) as a byproduct of the process, which you can use to make great veggie burgers. I haven't yet tried the recipe, but it looks like a lot of fun. It reminds me of my grandmother who would make fresh soy milk for us. There is just no comparison with the store bought kind. I think the freshly made tofu would be similarly eye opening.
