Perhaps the most popular things to make from leftover Thanksgiving turkey after a turkey sandwich, are Mexican. It's so easy to throw turkey into tacos, burritos, enchiladas or on top of nachos. So this turkey quesadilla made by grilling Jack cheese with turkey breast between two whole wheat flour tortillas is nothing special or exceedingly unique.
However, the cranberry salsa that goes with the quesadilla is awesome. It doesn't matter what kind of cranberry sauce you made for Thanksgiving...fresh relish, cooked whole berry chutney, even, God forbid, the ribbed jelly in the shape of a can, mixed with nuts, other fruits...it doesn't matter. Whatever you have leftover, whirl it in the food processor with minced garlic, onion, cilantro, fresh jalapeno, salt, and pepper until it's as chunky as you like your salsa. Cranberries are so much better with the spicy heat of the jalapenos than the overly sweet tart sauce it used to be, that you might go straight to the salsa for Thanksgiving next year.
