In the Philippines, cheese ice cream is very popular. Last time I was there, I had cheddar. It wasn't cooked into the ice cream batter like I had imagined. Instead, the ice cream had actual chunks of cheddar folded in. Although it sounds odd, it was quite good. The saltiness and sharpness of the cheddar were well balanced by the sweetness of the ice cream.
