Once summer ends, I lack the desire to make salads. It just doesn’t seem right to chop lettuce and tomatoes when there is snow on the ground. Lately though I have been trying to get out of that mindset, and am looking for new ways to put together a healthier plate of food.
Last night I was playing around with some ingredients and came up with this. I browned one tsp of butter, then removed from the heat and added some crushed pecans, a pinch of salt, one tsp of brown sugar, and a diced Gala apple. I filled a bowl with green leaf lettuce and cubed goat cheese, added the apple pecan mix, and tossed with a dressing made of two tbsp each olive oil and cider vinegar, ½ tsp Dijon mustard, one tbsp of honey, and salt and pepper to taste.
It was so good that I am having it again for lunch today. Maybe even for dinner. I also found a recipe for making your own goat cheese, which I hope to try in the next few weeks.

11-10-2005 @12:34AM Anthony said... I made this tonight for me and a friend of mine. He NEVER eats anything green. I told him it had goat cheese in it he refused to eat it. I got him to try a bite and he ate about twice as much as I did. Y'all should do more recipes with goat cheese. I need to do something with the left over that I have besides a salad.
We completely enjoyed it.

I told my parents about it and now I have to make it for them tomorrow. WOO! Salad AGAIN! I have almost used the goat cheese up, but I am really looking forward to the recipes. Thanks!
