His entry for the 16th October has a simple recipe for a carrot salad. Of course I am referring to Nigel Slater's Kitchen Diaries book. He writes about tossing grated carrots in a bowl with dry-roasted peanuts; now I don't really care for peanuts so I utilised a handful of walnuts left over from making walnut bread. I also used carrot peelings and not grated carrot.
I followed his idea though of dressing them with lemon juice and walnut oil and 'great handfuls of water-cress'. And voilà! Andrew's Autumn Salad adapted from a certain Mr. Slater.
