I adore Girl Scout cookies, but when I swore off trans fats five years ago, Thin Mints and Samoas had to go along with Ritz crackers, Oreos, and all my other long-lost loves. Surely, I thought, this respectable organization will do away with artificial ingredients before long! But, no. They continue to produce their shelf-stable and easily transportable trans-fats and artificial chocolate.Nic from Baking Bites to the rescue. She offers up a Thin Mints substitute made with good close-to-the-earth ingredients like butter, cocoa, and flour, and flavored with peppermint extract. She doesn't offer a chocolate coating recipe; I'm going to experiment and see what I come up with on my own.
