
My criteria for doing a dessert pizza were simple. I wanted one that used an actual pizza dough base and wasn't some sort of cookie in pizza shape. In browsing around I was surprised by how many dessert pizzas were really cookies or brownies in disguise. The recipe I chose was from Emeril's show.The recipe called for grilling but I cooked the recipe in the oven instead and it worked fine.
The dough was a standard pizza dough without additional sugar. It uses yeast and needs to rise once for 40 minutes and once for two hours. This is a dough that needs to be thin and crispy.
The strawberries soaked in orange liqueur (I used Cointreau) were
amazing, but you really need to make sure that you squeeze them out a
bit so that they are as dry as possible since they will release more juice
once they get in the oven. If you want your dessert pizza really sweet, add more honey to the goat cheese.The resulting leftover juice from the strawberries could make a
delicious sauce of its own, especially if you reduced it.
It's a great
recipe that would work well for a breakfast but if you like your
desserts really sweet you might want to add extra honey or sugar to the
pizza dough.

On the subject of dessert pizza, LA Weekly had a column (http://www.laweekly.com/ink/05/41/ask-gold.php) about chocolate pizza a few weeks ago, with the following recommendation (but no recipe):
"Caf?eneto [8636 W. Third St., Los Angeles]...seems to have mastered the ancient difficulties, and the chocolate-hazelnut pizza, essentially a lightly caramelized pizza crust split, stuffed with Nutella and sprinkled with powdered sugar, is supreme in its category — beautifully crunchy, not too sweet, and oozing what I believe cereal commercials call 'chocolatey goodness.'" Alas, I have not tried it.
