Pimiento cheese spread: it's good everywhere

pimiento cheese spread sandwichSure, you won't find packaged pimiento cheese spread outside the South. But you'll love it no matter where you live. I've been in love with the mayonnaisey, cheesy mixture since I begrudgingly tried it at a party in Charlotte when I was 22. It makes great sandwiches (even better on soft, cheap white bread) and it's lovely with celery sticks or other lunchbox crudite. Beki Lincks from The Oregonian has a great story about the history of the ubiquitous dip and a recipe for her version (there are hundreds of variations), and even suggests pairing it with a nice Oregon pinot noir. There's a spicier version and the story of how Karin Holloway picked her sorority based on its pimiento cheese sandwiches at the Augusta Chronicle.
