Blueberry burgers

I’m generally skeptical of recipes created first and foremost for health, but I think the combination of blueberries and beef could be pretty tasty. I’m sure I’ve seen blueberry and lamb sausages in a butcher case before.

Linda Dannenberg, author of the True Blueberry cookbook, apparently got the idea to add ground, freeze-dried blueberries to burgers from University of Maine researchers seeking to enrich meat products like ground beef and chicken. Today's St. Pete Time's has her recipe. About.com had a mention of this a while back as well.

If ever I get around to trying this I’ll be sure to post the results. If anyone out there has already tried it, by all means, share your opinions.

In the late 1970s or early 1980s, some university researcher combined 50% cherries and 50% ground beef to make burgers that apparently were delicious - according to surveys - and supposedly healthier. One wonders, though, if they were so delicious, why isn't anyone selling them over 20 years later?

8-31-2005 @7:15PM Colette said... Found a recipe for this burger about a year ago and finally persuaded my family to try it this past summer. The result was fantastic!! It was so good that there was no chatter at the dinner table that night- just moaning sounds.... However, did not use the recipe cited here- I used the one at eatingwell.com- highly recommend it. It is a very lean burger with lots of taste (the blueberries replace the juice and add some fiber to it too). Try it... you'll like it.
