My favorite grilled cheese is the old family grilled cheese with mayonase and mustard on the inside of the bread, though I have taken to using jalapeno mustard.

what happened to reqular grilled with white bread? i didn't see it on the list. My favorite combo of cheeses, at least at this very moment, would be moz, provalone and gouda with a nice slice of tomato...oh man am i making my self hungry

Not to toot my own horn, but my grilled cheese (http://flickr.com/photos/volk/37624896/) was the traditional kind. Although I did jazz it up with rye bread.
